Roasting to a perfect medium-rare allows its natural flavour to shine, while slow, moist cooking methods can transform it into a wonderfully succulent dish. It's also great at absorbing flavours so is ideal for marinating. Remember to rest your prime topside for 10-15 minutes after cooking to ensure the most tender slices
